    This study presents an analysis of a case study of village Z, located in Sichuan Province, China, with respect to the practice of part time farming by workers working away from home and the diversification in the scale of farming. As such it presents a view of Chinese inland farming villages. As almost all of part-time farmers in village Z who work away from home, either in Chengdu City or other cities in Guangdong province, return to the village only temporarily to farm their own land in the busy farming seasons but also refuse to vacate their land, the lenders of their land usage rights are scarce. On the other hand, many full-time farmers who have raised vegetables since the mid-1990s have been able to live on their farming income on the basis of small planted areas without expanding the scale of their activities by renting out their land. These scarcities of borrowing and lending intentions have restricted the liquidation of farmland and without leading to the creation of upper-class farming households in the village Z.

    This paper clarifies the following points regarding development of catering service enterprises in China. First, the events of the Beijing 2008 Olympic Games and Shanghai World Expo had an effect on increasing restaurant enterprises, their employees and catering-related revenue. Second, while the growth of the catering service industry is recently slowing somewhat, on the contrary, the fast-food industry has been continuingly growing. Related to this, compared with dinner restaurant enterprises, the earnings rate of fast-food restaurants is high. That is a result of efficiency of the store operation. Third, according to the survey of a number of restaurants in Beijing city reported on herein, the ingredient pricing for menu items, together with labor costs and rent fees has been increasing dramatically, making necessary raising menu prices in the restaurants. However, while this increase in menu prices results in increased revenue, this is still below the rises in labor and rent costs. Therefore, the management of catering service enterprises seems to be changing for worse recently.

    This study undertook an analysis of a case study village S in Sichuan province, with respect to the liquidation of farmland in Chinese inland farming villages. F irst, in a labor market where employment opportunities are scarce, and where younger farmers have left high school or college, work away from home in Chengdu city or other large cities, there tends to an increase in the lending of land usage rights. On the other hand, older farmers with no formal education or those who had completed only primary school have no option but to engage in physical labor at the construction industry within their own towns or to work in full-time farming in their villages, while expanding the scale of their activities by renting out their land. These borrowing and lending activities have pr omoted the liquidation of farmland in villages, leading numerous farmers to vacate their land; this phenomenon has, in turn, lead to the creation of upper-class farming households.

    This work has clarified some recent problems at dairy agricultural cooperatives as well as the effects of mergers upon operations. First, mergers between dairy agricultural cooperatives primarily occur when the cooperatives are unable to leverage their various business functions due to a reduction in the scale of operations caused by a lower number of milk-producing households and a drop-off in business. Also, reducing the number of employees, closing branch offices, and scaling back certain projects subsequent to mergers produces a temporary improvement in operational balance of payments. However, the subsequent reduction in the number of milk-producing households and in business activity cancels out the effects of mergers. This creates the need for further mergers. Also, financial operations at dairy agricultural cooperatives have the following special characteristics. First, with regard to operational balance of payments, the cooperative's primary business activities run a deficit, and the current profitability of the cooperative depends largely upon non-business earnings such as land rental fees, mutual insurance fees,miscellaneous interest, investment dividends received,and so on. With regard to balance of payments, dairy agricultural cooperatives resemble multi-purpose agricultural cooperatives, which make up for the deficits incurred by the agricultural business with earnings from credit and mutual insurance businesses.

    This study on the outside dining patterns of urban citizens of various age groups in Beijing has clarified the following points. First, among menu choices when dining out, there is a preference for traditional Chinese foods,particularly among the middle-aged and elderly. On the other hand, the younger generation exhibits a marked preference for fast food and rice bowls. Second, individuals in their 20s and 30s utilize a wide range of outside dining establishments, from fast food restaurants aimed at the general public to upscale hotel restaurants and restaurants serving international cuisine. Also, the younger generation tends to have a sense of "gluttony" regarding outside dining expenditures, and many intend to dine out less often in the future. Third, different types of companions tend to accompany diners to different venues. For instance, diners utilize workplace cafeterias because of user-friendly attributes such as low cost and proximity, and the ordinary usage pattern involves employees eating lunch with their coworkers on weekdays. On the other hand, among individuals in their 20s, fast food establishments and ordinary restaurants are utilized primarily as venues for deepening relationships with friends and relatives over lunch or dinner on days off. Additionally,among individuals in their 30s and 40s, saturday and sunday lunch and dinner outings are generally enjoyed together with children. Thus, forms of outside dining expenditures are strongly influenced by the life cycles of urban citizens.

    This study examines the process of greengrocery merchandising at the local supermarket. In particular, the study focuses on the recent trend of "farmer's market in the supermarket (in-shop)." For this study, we analyze data collected from a supermarket located in Akita. The purpose of the study is to examine the following: 1) changes in the marketing strategy of A supermarket for greengroceries, and 2) actual purchases and sales.<br>The results indicate that the store's competitiveness is strengthened by the procurement of high quality greengrocery. That the high quality fruit and vegetables to provide such a "in-shop". In addition, there are shops, just a "rental location" is not. An important part of management is to ensure that fresh (in-shop) and regular (supermarket) items complement each other.

    This present research has clarified the following points. First, along with rising incomes, expenditures for dining out among Chinese urban citizens have been increasing at an extremely high rate since the latter half of the 1990s. However, the proportion of expenditures for dining out among all food expenditures has remained level since 2006. This is due to the slowing of income growth and the diversification of expenditures for dining out. Second, individuals in their 20s and 30s dine out frequently, but this is not the case among the middle-aged and elderly (50 years and older). Also, individuals in their 20s are the age group for which the increase in expenditures for dining out is the most pronounced, while such expenditures have been decreasing among individuals in their 50s and older. Third, traditional Chinese foods such as noodles and jiaozi (dumplings) are frequently chosen from restaurant menus, but fast food and rice bowls are also prevalent choices. The preference for fast food is particularly pronounced among the younger generation. Fourth, there are differences among cities in terms of the frequency of dining out as well as dining choices. This background of regional particularity is informed by differences in eating habits and food culture. Thus, it is clear that menu choices as well as upward and downward trends in the frequency of outside dining differ greatly across different age groups. Therefore, it is proper to view the diversity of forms of outside dining and the associated changes in relation to the life cycles of urban citizens.

    An analysis of a case study involving village H in Heilongjiang Province produced the following results with regard to the liquidization of the farmlands located in the minority Korean farming villages and diversification in the scale of agricultural activities. First, in a labor market where employment opportunities are scarce, restrictions on ethnic Korean citizens regarding travel to Korea have been loosened, leading to a surge in ethnic Korean migrant laborers. This has brought about an increase in the lending of land usage rights. On the other hand, in neighboring village T, where each household administers only a small plot of land, there are numerous farming households harboring a latent desire to expand the scale of their activities by renting out land. These borrowing and lending activities have encouraged the liquidization of the farmlands located in villages, leading numerous ethnic Korean farmers to vacate their land and creating upper-class farming households.

    本論は,中国における良質米産地として著名である黒竜江省五常市を対象とした有機栽培米産地形成に関する調査研究の第2報である.調査対象地は五常市のなかでも有機米生産の中核となっている民楽郷である.ここでは,急速な稲作有機栽域の拡大の過程で,3つのタイプの農民組織が形成されているが,それは産地ブランド形成における加工流通企業の機能変化のなかに位置づけることが可能であると考えられる.このことは,中国における農村組織化の必然性とそのタイプを考える上でも重要である.すなわち,2007年の合作社法により急速に農民専業合作社が形成されているが,それは自生的な協同組合形成と捉えるよりは,商品化過程における加工流通企業の補完的存在として捉えられるからである.この様な問題関心と有機米産地形成に至る各段階の米穀加工販売企業(米業)の機能変化を踏まえて,何故有機米産地段階において農民合作社等が形成されるのかという視点からその存立意義を明らかにする.このことにより,産地形成における農村組織化の意義を考えてみたい.

    Northeast China, especially Heilongjiang province, is developing rapidly as a rising rice-production area.The State Farm, which is a developing entity of paddy fields on the Sanjiang plain near the Sino-Burmese border, has developed several peasant groups with an average business scale of 10-hectare farmland based on well irrigation. Furthermore, both an agricultural-technology system and a mechanization system are being built as the business scale expands. The object of this study is another rice production area in Heilongjiang province, namely, Wuchang City, where the production area for quality rice has been exploited and developed by Korean immigrants since the 1940s. The heartland of Wuchang City is Minle Township. We have already published two papers focusing on the formation of the production area for quality rice and organization problems. In terms of the stability of land leases, this research aims to analyze the business condition of medium and large peasant households from the perspective of technology gaps between different business strata, based on a case study of two large-scale households and three medium-scale households.

    This is the second of the essays that study the development of organic rice production areas based on the case of Heilongjiang Wuchang City, which is famous for being the breadbasket of quality rice. In this study, Minle Township, which is the core area of organic rice production in Wuchang City, is chosen for the research. This essay also summarizes the process Minle County underwent to become an organic rice growing area. Furthermore, three production and sales organizations are given as examples, and their organic rice management characteristics are analyzed. The first case is the Fengsu Cooperative, which is an extensive and specialized farmersユ cooperative established in 2006 with 450 household members and a 2,000-hectare production base. The next case is the Farming Science and Technology Association, which is an organization centered on skilled peasant households, established in 2002. This association is transregional and has 100 household members and a 300-hectare production base. The third case is the Meiyu Cooperative, established by villager groups in 2008. With 100 household members and a 200-hectare production base, the Meiyu Cooperative is an organization based on and controlled by an enterprise providing a residence community for their members. In addition, although several peasant households receive orders directly from the enterprise,spontaneously-organized peasant cooperatives are more common, against the backdrop that organic longgrain rice now sells at high prices. All these factors demonstrate the characteristics of Minle County as a production area of premium rice.

  • The Analysis of Rice Consumption of the Southward from Chang Jiang in China : Based on the consumer Questionnaires Reviewed

    The consumer questionnaires done in the cities southward from Chang Jiang revealed that per capita rice consumption had been decreasing due to consumption of non-staple food and wheat products. In addition, about half of the answerers to the questionnaire had increased their japonica rice consumption. Consumers with a taste for sticky rice account for about 60% of the answerers. These indicate that southward from Chang Jiang, where the majority of rice produced is indica rice, there is a large market for Northeast rice, i.e., sticky japonica rice. On the other hand, most answerers indicated a taste for aromatic rice, which is related to rating Thai rice highly. Therefore, it is assumed that enlargement of the market for Northeast rice is conditioned by the relative price to indica rice and the possibility of breeding japonica rice as an aromatic rice.<br>

    In China, the per capita rice consumption of rural residents in provinces where the staple food is rice has been decreasing since 1991. In contrast, in provinces where the staple food is wheat the per capita rice consumption has increased. It is assumed that in provinces where the staple food is wheat, the rural residents’ tendency to increase the rice consumption is fairly preceded by the urban residents. To investigate this phenomenon, consumer questionnaires were administered to residents in the city of Shijiazhuan. The result revealed that the weekly consumption of rice was more than that of wheat. In this context, the urban residents come from the wheat consuming provinces and have tasted rice only in recent years, yet rice has already become the staple food for a majority of urban residents. Therefore, the rice consumption of urban residents in the provinces where wheat is the staple food is expected to increase in the future.<br>

    The central government of China, in accordance with its Reform and Opening-up Policy, has resumed a restrictive trading system with neighboring countries (Remote region trading) to efficiently promote the development of regional economy. However, the disparity between the trade system's original purpose and the reality has widened along with the significant progress of deregulation. This paper examines the significance of the restrictive trading system in Xinjiang Uighur Autonomous Region with neighboring countries to the development of regional economy, and the changes in and issues related to the system, by analyzing the development process of the trade system.

    The role of agricultural cooleratives for tice maekrting has been changed since 1994. It is supposed to be based on the rice policy reform. Moreover, rice policy has newly been reformed in this times. This paper looks for the development of rice marketing business of agricultural cooperatives under the market-oriented dereguration of rice policy. This paper is based on case study conducted on the present situation of agricultural cooperative's rice marketing in Fukuoka Prefecture under the rice policy reform. The agricultural cooperative's, namely, JA Chikuzen Asakura, JA Itoshima and JA FUkuokashi were visited for fact finding on the spot. The result of this study has provided us some meaningful conclusions. The tendency of agricultural cooperatives try to colect rice from farmers as much as possible, and then strive to sell out at price as higher as possible. But if marketing compention among agricultural cooperatives exists, rice price would decline and rice production and move to other non-rice crops. It seem that rice production system and rice marketing business of agricultural cooperatives will dramatically be made over.

    The analysis of rice by using mid infrared spectroscopy was tried for providing the useful quality information of agricultural products and a simple, rapid, and accurate method for quality evaluation. Mid infrared spectroscopy can acquire sensing information that is more detailed than near infrared spectroscopy, which has used on the rice analyzer for eating quality. In the experience, mid infrared spectrum of brown rice grains, white rice grains, powder of brown and white rice and bran were obtained by using the FT-IR/ATR spectroscopy. The difference between brown rice and white rice was found in the wavenumber area from 1700cm-1 to 900cm-1, where is appeared by the absorption of amino group and sugar. Especially, the wavenumber band area from 1200cm-1 to 900cm-1 is called the fingerprint region of sugar. In the mid infrared spectroscopic analysis of lipid extracted form rice, it was found that the characteristic absorption of rice lipid was 2922cm-1, 2853cm-1 and 1744cm-1. From this matter, it was found that freshness evaluation of rice could be performed by mid infrared spectroscopy using FT-IR/ATR because freshness of rice related with the oxidation of rice lipid.

    本研究では、日本のコメ産業システムの国際化対応について、競合するアジア諸国の展開と比較しつつ、バリューチェーン全体の「システム輸出」の現段階的特徴について実態調査により明らかにすることとしている。具体的には、コメ及び加工品・資材製品市場における、①製品輸出・販売、②海外現地生産化、③現地販売促進機能としての日本産米の位置づけ、④国際対応の進展による国内生産への跳ね返り効果の検証が予定されている。コロナ情勢のもとで、対象国における実態調査は、今年度も非現実的であると判断し、① 各国における日本産「コメ・コメ加工品」の販売・マーケティングの検証については、当該企業の日
    本(本社機能)での展開・販売戦略再構築についての実態調査により明らかにしつつ、今後、情勢が落ち着いた際の現地実態調査に向けての関係構築につとめた。② 各国における「コメ・コメ加工品」の流通構造とそこでの製品競合関係の検証については、現地における研究協力者からの情報を得るにとどめ、香港および米国での日本酒・加工米飯の消費回復、ヨーロッパおよび中国における「おにぎり」の新展開についての知見を得た。③ コメ生産および加工・製品流通の現地化、④ 現地系資本による「日本風」製品製造と日系製品との市場競合の検証については、文献調査をほぼ終えた。この間の研究成果は、書籍1報・業界紙1報による公表を行った。加えて農業市場学会編の書籍1報も刊行予定となっている。

    After a pre-research, the Internet research was executed for the monitor of about 1400 people about farm products purchase on the Internet. The consumer who purchase on the Internet got the intention of valuing the eating quality strongly, and not valuing the price so much admitted compared with the person who did not use the Internet at purchasing farm products. The order of the strength of the intention was the Internet purchase, the mail order use except the internet and the purchase in the supermarket.
    Technical data were measured about the farming in a farming union (corporation as juridical person) that performed the Internet sale of farm products in Niigata prefecture. The growth stage was forecast by using an existing paddy rice growth forecasting model by the meteorological data. And, the amount of growth of the rice plant and the color of the leaf were monitored according to time series. Moreover, the field examination was done under the condition to change the effect of various nitrogen by using the LP fertilizer to measure and the color, the amount of the leaf, and the content of the protein in rice, beside the content of all nitrogen in the soil and the content of K and Mg were investigated. In addition, the system that always automatically monitored the paddy-field rice growth process with the network camera was constructed, and the labor time for farming and so on. were able to observed continuously. Furthermore, a mid infrared spectroscopy analysis using FT-IR(Travel IR) was tried for providing the useful quality information of farm products. The analysis was executed about both the brown rice and white rice of the union's paddy-fields in the state of not only grainy but powder. Especially, it was found that the characteristic absorption of rice lipid was the wave number band area 2922cm-1, 2853cm-1 and 1744cm-1. The lipid takes part in the quality of rice. FT-IR is expected to be able to be applied for a simple judgment in the quality control of rice.
    Based on the above-mentioned consumer research results and the measured technical data, it was done to investigate as experiment about the consumer's interest toward the rice of the union by the Internet. The consumer's response was examined by operating presentation information on the web page so that all the total eight kind pages which contain each two levels of information on three factors(the product area, the eating quality, and the cultivation method)might hit separately to each respondent. In the consumer's evaluation, statistical difference was observed only by the amount of information on the cultivation method, which also mentions the difference information on the eating quality and environmental preservation. It is suggested that the information on the web is able to influence in the purchasing, only presenting significant information somehow for the consumer.
